Potato vines typically sprawl around, some varieties much more than
others. Don't worry about it as long as the leaves are healthy-looking.
When you see blossoms appear, carefully dig around the vines and "steal"
a few new potatoes to steam. Just add a little butter, salt & pepper,
and enjoy the flavor. Most people never get the chance to taste
potatoes before their natural sugars turn to starch - it's a whole
different world of taste!
Like sweet corn, the conversion of sugar to starch begins as soon as you
pick the potatoes. The advice to get the pot boiling before you go to
the Garden to pick them is appropriate.
