Any suggestions for preserving or marinating arti***hearts, especially in
a Mediterranean fashion i.e. using olive oil and garlic?

Steven,
        It's been awhile... all I remember is

wine vinegar
olive oil
minced garlic cloves
oregano

        I'm pretty sure those were all the ingredients, but I'm not sure that I
know the amounts or if the person who gave me the recipe ever mentioned
any.  I believe I used equal amounts of the first two, 2 garlic cloves
and lots of oregano.  Let marinate over night.  Whatever I used, it must
have worked, they didn't last any time at all :)
