Brazillian Rainbow help

I recently got a 5 foot BRB and set her up with the exo-terra waterfall with
fogger for humidity. Works great, looks cool, the problem is it is soaking
the substrate (exo-terra jungle earth). I was thinking about placing moss
around it to soak some of it up or trying the esu jungle mix. Any ideas
would be apreciated. What do other BRB keepers use to keep the humidity up?

I have not seen your setup, so let me ask - are you using an enclosure
with any screening or other large areas open to air movement?  One thing
I've found with monitors is that an enclosure with a screen top
(especially with an overhead heat lamp) really dries out the enclosure.
  Hot air rises, taking the moisture with it, right out the top.
Replacing all screening with plexiglas really helps keep the humidity up.

Just an idea.

Its a 50 long with a screen top, I have a towel over the majority of the top
and the humidity level is good, my main concern is the substrate being too
wet from the fogger.

Luke is right, screen tops don't hold heat or humidity, and as the heat rises
the humidity goes away with it. it's also very inefficient- a cage that doesnt
hold heat is heating your room and house, and causing your AC to kick in,
causing the heater to kick in again,(if you have a thermostat for the cage
heater.)  Barring getting a cage like Vision, with the vents on the sides or
back,  replacing most of the  top with plexiglass will help. but you still want
some circulation.
I'd ditch the fogger, and  just spray the substrate as needed. Buy a
thingy(can't remember the scientific name) that measures humidity, do it that
way.
Rainbows do like it humid,and I've kept mine very humid at times, and never had
them have water blisters, but also too wet conditions can let mold grow in the
substrate. I've sometimes kept them on orchid/fir bark, the only down side
being it's harder to spot the feces.
